
Nothing says summer quite like the smells and tastes of a cookout. A good cookout can be the perfect addition to any gathering, or for a quiet night at home. The Nebraska Medical Association reminds you to be safe while using a grill and cooking food outdoors.
Proper use of a grill is the best place to start for cookout safety. Keep the grill off wooden decks and at least 10 feet away from structures, and make sure your clothing is out of the way of flames. Keep a close eye on those around you, especially children.
If you are using a gas grill, make sure it is in proper working order and that the lid remains open when lighting. If you use a charcoal grill, soak the coals before lighting. Do not add lighter fluid to an existing flame as flashback can occur causing serious injury.
Safe food handling is also important to minimize contamination with food-borne bacteria and contamination. Remember to keep meats refrigerated until you are ready to place them on the grill, and to cook them to the proper temperature: usually 160ºF for hamburgers, 145ºF - 160ºF for steaks, and 160ºF - 180ºF for poultry.
